Vegan Pumpkin Bread

Pumpkin goodness, vegan style.
ingredients:
3.5 cups whole wheat or all purpose flour
2 cups light brown sugar
1/3 cup granulated sugar
2 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
1 1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup vegetable oil
1/3 cup maple syrup
directions:
  1. Preheat oven to 350 F or 180 C
  2. Line your dish of choice with parchment paper
  3. Mix the spices, sugar, flour, baking soda and baking powder together in a medium bowl
  4. In another bowl combine the oil and maple syrup
  5. Fold the wet ingredients into the dry ingredients carefully, making sure no bits of powder get stuck at the bottom
  6. Pour the batter into your dish
  7. Bake for about 1 hour and enjoy!
