Pumpkin goodness, vegan style.
ingredients:
3.5 cups whole wheat or all purpose flour
2 cups light brown sugar
1/3 cup granulated sugar
2 teaspoon baking powder
1 teaspoon baking soda
pinch of salt
1 1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground nutmeg
1 cup vegetable oil
1/3 cup maple syrup
directions:

Preheat oven to 350 F or 180 C
- Line your dish of choice with parchment paper
- Mix the spices, sugar, flour, baking soda and baking powder together in a medium bowl
- In another bowl combine the oil and maple syrup
- Fold the wet ingredients into the dry ingredients carefully, making sure no bits of powder get stuck at the bottom
- Pour the batter into your dish
- Bake for about 1 hour and enjoy!
